I have seen several friends on Facebook and Instagram post that they have been carb loading and stress eating during this time. Pasta is one of those carb-licious meals that the entire family enjoys.
Our dinner included Ziggy’s Cheese Tortellini and PC Buttermilk Chicken from No Frills and a side salad. Since we are a family of three, there was one serving of pasta leftover. We always cook extra of the Buttermilk Chicken for lunches the next day. It is easy to slice up and add to my daughter’s Planetbox, toss into a roll with some cheese and tomato, or cube into a salad.
This is the healthy lunch, so the chicken was cubed and added to a bed of butter lettuce. Add some cucumber, tomato, and pepper to amp up the nutrition. Bacon … because bacon. Then, add the cold tortellini – it is pasta salad with more focus on the salad part! Either eat like this or add a little Caesar dressing to bump up the flavour.
