Note: This series was created due to the COVID-19 pandemic and the requirement to practice social distancing and stay home as much as possible. I hope that despite all the closures and the crazy grocery store lines, you can still find opportunities to stay calm, enjoy the extra time with your loved ones, organize the areas that need to be addressed, and find something (book, movie, craft) to bring you enthusiasm. Choose to be as balanced as possible and stay healthy.
This need to bake came out of two needs:
- A nearly full and expired 900mL container of plain yogurt.
- A desire to bake something but too lazy to do something complicated.
I had heard that making soda bread is fairly easy. There is no yeast and no need to wait for something to rise. So I started to google soda bread recipes … and they all need BUTTERMILK. Who buys buttermilk anymore? If this was pancakes, I would have just tossed some lemon juice into my milk and called myself ready. Yogurt is a different texture.
Google attempt 2 … Soda bread made with yogurt … BINGO!
I used the recipe by Jo’s Kitchen Larder – it has good reviews, plenty of hints, helpful pictures, and made it sound easy.
I call that a success. Little butter. Little cheese. Lots of yum.
